Mexiko - Výzva odvážných pekařů září 2013 - Daring bakers September 2013 - Pastel de tres leches - Trojmléčný dort



Výzvu odvážných pekařů pro září 2013 pro nás připravila mexičanka Inma z la Galletika. Jedná se o dort Pastel de tres leches, tedy doslovně dort ze tří druhů mlék. K jeho přípravě se použije neslazené a slazené kondenzované mléko a šlehačka.


Pastel de tres leches je hodně populární ve Střední a Jižní Americe, o originální místo vzniku se vedou spory. Dort je hodně vlhký, lehký, nadýchaný a výborný. Piškot má texturu se spoustou vzduchových bublinek, proto výborně nasákne sirup, ale přesto není promočený.


A co na přípravu této dobroty potřebujeme?

Pastel de tres leches

Na těsto: 
5 velkých vajec (bílky a žloutky oddělené)
1/2 hrnečku (125g) cukru krystal
1 hrneček (140g) hladké mouky
2 lžičky vanilkového extraktu

Na mléčný sirup:
400g slazeného zahuštěného kondenzovaného mléka
340g neslazeného kondenzovaného mléka
1 hrnek tučné smetany na šlehání nebo 1 hrnek mléka
1 tyčinka skořice
2 lžičky rumu (to je hodně málo, vůbec to sirup neochutí, já tam lila rum od oka, dokud jsem ho v tam pořádně necítila :-)

Krém:
2 hrnečky (500ml) smetany na šlehání
1/2 hrnečku (125g) cukru
čerstvé nebo kompotované ovoce (já použila kompotované broskve)


Postup:

Těsto:
1. Předehřejte troubu na 180°C. Připravte si formu o průměru 23 cm (já použila menši 18cm + 10 cm, chtěla jsem mít dorty roztomilé malé :).
2. Oddělte bílky od žloutků.
3. Bílky šlehejte na střední rychlost cca 3-5 minut.
4. Poté postupně v malých dávkách přišlehávejte cukr. Šlehejte cca 5 minut a odložte stranou.
5. Vyšlehejte žloutky do husté světle žluté pěny (cca 5 minut). Poté přidejte vanilku.
6. Žloutky jemně vmíchejte do bílků tak, aby hmota neztratila svůj objem.
7. Přidejte prosátou mouku a opět jemně vmíchejte, dokud nevznikne hladké těsto. Nepřemíchejte ho, je potřeba, aby zůstalo nadýchané.
8. Dejte do formy vyložené pečícím papírem a pečte 25 minut, dokud se těsto nebude lepit na špejli.
9. Nechte vychladit, poté rozřízněte a propíchejte špejlí, aby korpus lépe absorboval mléčný sirup.

Sirup:
1. Do hrnce dáme všechny ingredience a přivedeme k varu. Snížíme teplotu a vaříme 5 minut. Odstraníme z tepla a necháme vychladnout.
2. Do vychlazeného sirupu přimícháme rum.
3. Pomocí mašlovačky naneseme sirup na dort - boky i rozříznuté hrany. Piškot musí být sirupem hodně nasáknutý. Aby se sirup dobře vstřebal, je lepší nechat dort přes noc v lednici.

Krém:
1. Vyšlehejte šlehačku do tuha, poté zašlehejte po malých částech cukr a šlehejte 2 minuty. Nepoužila jsem celé množství cukru jako je v receptu, protože sirup je sám o sobě hodně sladký, broskve také a i v piškotu je cukr...šlehačku jsem vyšlehala jen se 4 lžícemi cukru.

Sestavení a zdobení dortu:
1. Šlehačku dáme na jednu část dortového piškotu, pokryjeme nakrájeným ovocem, na které opět dáme šlehačku.
2. Přikryjeme druhou částí piškotu, pomažeme zbylou šlehačkou a dle fantazie ozdobíme.

Inma was our Sept. 2013 Daring Bakers´ hostess and WOW did she bring us something decadent and delicious! Pastel de Tres Leches or Three Milk Cake, creamy yea airy, super moist but not soggy.. just plain delish!

Three milk cake is very popular in many parts of Central and South America. The origin of the Pastel de tres leches are disputed. It is moist, light, airy and super delitious sponge cake soaked in three kinds of milk (evaporated milk, condensed milk and heavy cream).


And what do we need for this delitious cake?

Three milk cake

For the vanilla sponge cake:
5 large eggs (separated)
1/2 cup (125g) sugar
1 cup (140g) all-purpose flour
2 teaspons of vanilla extract

For three milks syrup:
1 can (400g) sweetened condensed milk
1 can (340g) evaporated milk
1 cup (240ml) heavy cream or 1 cup milk
1 cinnamon stick
2 teaspoons rum (I used more, I like strong rum flavor)

Topping and filling:
2 cups (500ml) of whipping cream (about 30% fat)
1/2 cup (125g) sugar
Canned or fresh fruit (to fill and decorate the cake, I used canned peaches)


Directions for the sponge cake:
1. Preheat oven to moderate 180°C/350°F. Prepare a round pan (23cm; I used 18cm and 10cm).
2. Separate the egg whites form the yolks.
3. Beat the egg whites on medium speed, 3-5 minutes.
4. When soft peaks form, slowly add the sugar in small batches.
5. Whip until stiff peaks form about 5 minutes. Set aside.
6. In a medium bowl beat egg yolks at medium-high speed for about 5 to 6 minutes, or until the egg yolks become pale colored, creamy and puffy. Stir in vanilla.
7. Pour the egg yolks over the egg whites, gently fold until combined, trying not to lose any volume of the mixture.
8. Fold in the flour little by little in the form of rain. Mix until just combined (over-beating will result in a denser, flatter cake).
9. Pour the batter into the prepard cake pan and bake for 25 minutes or until the toothpick comes out clean.
10. Let it cool.
11. Once the cake is cold, split the cake in half, flip the top of the cake and place it on a base. Poke using a fork holes all over the cake to better absorb the tree milk soaking liquid.

Three milks syrup:
1. In a saucepan add the sweetened condensed milk, evaporated milk, heavy cream and cinnamon stick, bring to a boil, reduce the heat and continue boiling for 5 minutes. Remove it and let it cool.
2. Once it is cool, add the rum or any other flavorig you are using.
3. Gradually brush all the milk soaking liquid into all sides of the cake (including the cut surfaces) until all absorbed. Refrigenerate overnight to better soaking process.

Toping:
1. Whip the cream, when soft peaks form add the sugar little by little, continue whipping until stiff peaks form about 2 minutes. I didin´t use the whole amount of sugar, because, syrup is very sweet and I didn´t want the cake too sweet. I used abou 4 tablespoons of sugar.

Decoration:
1. Layer some whipped cream on the bottom layer and cover with canned or fresh fruit and decorate the top layer with whipped cream and the fresh or canned fruit.
